Introductions:

Pure xylitol is a white crystalline natural substance that looks and tastes like

sugar. Xylitol's sweetness is equal to sugar, but it contains 40% fewer calories

than sugar. Xylitol is recommended for diabetics, since it does not require insulin

to be metabolized. Xylitol has been proven in clinical testing to dramatically

reduce the incidence of cavities, plaque formation and kills the germs that

cause bad breath. The positive effects of xylitol appear to long lasting and may

possibly be permanent. Xylitol as the healthy sweetener is added into chewing 

gums, breath mints, toothpastes, confectionaries and soft drinks.



Features:

1) No fermentation: xylitol is anti-cariogenic because xylitol can not be 

    utilized by buccal cariogenic bacteria and thus prevent the growth of 

    bacteria and acid

2) Solubility: xylitol is soluble in water. Xylitol gives a pleasant cool and fresh

    sensation as we eat it, owing to its character of high endothermic in 

    solution. The sweetness of xylitol equals that of sucrose at normal 

    temperature, which is 1.2 times of sucrose at lower temperatures. With 

    maltose it equals the sweetness of sucrose when xylitol exceeds half of 

    the amount (test based on 10% sucrose solution as reference)

3) Can stabilize blood glucose level: the metabolism of xylitol in human 

    body does not involve insulin and will not cause blood glucose levels to 

    rise. Xylitol has a nature of high heat-resistance and is passive to acid 

    and alkali. It will not react on amino phenol and protein

4) Xylitol can absorb more heat than sorbitol in process of solution and give

Applications:

1) Widely used in food and beverage industries:

    a) Because it can not be used by bacteria that may cause caries, 

        the anticarious action of xylitol is better than those of fructose and 

        cane sugar. It does not produce any acids in mouth cavity, therefore 

        it may help the mouth cavity neutral and protect teeth from acidic 

        erosion. In view of this, xylitol is used as a sweetener in anticarious 

        foods and beverages in the world, such as chewing gums, chocolates 

        and soft drinks which contains xylitol

    b) Renders a kind of freshness and sweet taste. When heated, it does not go 

        Maillard browning reactions. It is stable in nature and can absorb moisture.

        And it can be fermented by yeasts. Due to these characteristics, it can be 

        used as a sweetening ingredient for soft pastries, candies, chocolate foods 

        and thus the shelf life is extended without being absorbed. It can be used 

        to make alcoholic beverages more fragrant, mellow and softly sweet, and to

        reduce or inhibit biological degradation

    c) Used as a substitute for table sugar, so as to prevent the occurrence of 

        adiposis and diabetes caused by excessive uptake of cane sugar. It can
